1½ oz C.W. Irwin Bourbon
¾ oz Simple Syrup
¾ oz Lime Juice
Club Soda
2-3 Fresh Mint Sprigs
Lime Wedge for garnish

Remove only the mint leaves from two of the mint sprigs. Begin by adding only mint to the bottom of a shaker tin. Gently muddle mint without breaking it up too much. Now add lime juice, simple syrup and ice. Give the ingredients a 15-20 second shake. Strain over fresh ice into a highball glass. Top with club soda water and garnish with remaining mint sprig and lime wedge.

Here is a great play on the classic mojito. As the temperatures increase outside, it’s nice to have a few options to mix up for patio sipping or for guests. This cocktail shines bright, as the flavor of the C.W. Irwin Bourbon is still present with a touch of mint and lime.

Sparkling Wild Sazerac

 

1/2 oz Wild Card Absinthe
2 oz C.W. Irwin Bourbon
1 Sugar Cube
2 Dashes Bitters
Soda Water
Lemon Twist

For a tasty variation of a traditional sazerac, pour Wild Card, C.W. Irwin Bourbon, sugar cube and bitters in a rocks glass and muddle well. Fill glass with ice. Top with small amount of soda water and stir. Add lemon twist for garnish.

Try this cranberry bourbon cocktail recipe for the holiday season. It’s a festive drink reminiscent of fall, and the winter spices add a nice touch with a slight effervescence.

2 oz C.W. Irwin Bourbon
½ oz Brown Sugar Simple Syrup
2 Whole Cloves
1 0z Cranberry Juice
Hard Cider
Cranberries for Garnish

Fill shaker tin with ice. Add C.W. Irwin Bourbon, Cranberry Juice, Simple Syrup and Whole Cloves. Shake, strain into martini or coupe glass then top with Hard Cider. Garnish with fresh or frozen whole cranberries.

Port-O Manhattan

The Manhattan is a tried and true cocktail enjoyed throughout the year. Here in Central Oregon with the onset of fall, you might elect to change up the classic Manhattan to create a drink even more indicative of the season. By using tawny port in place of sweet vermouth, the traditional Manhattan becomes a bit more complex. I also exchange the orange bitters for Angostura bitters to add zesty citrus notes to the drink, which balances nicely with the buttery, oaky flavors imparted by the port.

2 oz C.W. Irwin Bourbon
1 oz port
1 tsp. maple syrup
2 dashes of Angostura or orange bitters
Bourbon soaked or maraschino cherries for garnish

Begin with a shaker tin filled with ice. Add all ingredients and give a nice stir with bar spoon until well mixed. Strain into a Martini or Coupe Glass. Garnish with bourbon-soaked (pictured) or maraschino cherries.

.5 oz Brown Sugar & Cinnamon Simple Syrup
.5 oz Lemon Juice

Add all ingredients to shaker tin filled with ice. Shake and strain into a coupe or martini glass. Garnish with Orange Zest or Cinnamon Stick.

2 oz Grapefruit Juice
2 Dashes of Grapefruit Bitters
Splash of Simple Syrup
4-6 Basil Leaves + 1 Basil Sprig for Garnish

Begin by giving basil a light muddle in shaker tin. Add ice and remaining ingredients. Shake and strain into a lowball glass filled with ice. Garnish with a sprig of fresh basil.

6 drops of Wild Card Absinthe
1 oz Simple Syrup
1 oz Lemon Juice
1 Egg White

Dry Shake all ingredients in shaker tin for twenty seconds, then add ice and continue shaking for another minute or so. Now strain into a coupe glass and garnish with a lemon twist.

Central Oregoni Cocktail

2 oz C.W. Irwin Bourbon
1 oz Sweet Vermouth
2 oz San Pelligrino Blood Orange

Fill Lowball Glass with ice. Add C.W. Irwin Bourbon and Sweet Vermouth, stir. Top off glass with ice and fill with San Pelligrino Blood Orange.

Whiskey Sour

 

1 1⁄2 oz CW Irwin Bourbon
3⁄4 oz Simple Syrup
Juice from 1⁄2 a lemon
3⁄4 oz Egg White

Fill cocktail shaker with ice, add all ingredients, and shake vigorously. Shake very hard to get the ingredients to emulsify and form a layer of foam on top of the cocktail. Strain into a chilled Old Fashioned glass.
