1.5 oz Oregon Spirit Distillers Bourbon
.75 oz simple syrup
.75 oz lime juice
2-3 fresh mint sprigs
lime wedge for garnish
Remove only the mint leaves from two of the sprigs. Add only mint to the bottom of a shaker tin. Gently muddle mint without breaking it up too much. Now add lime juice, simple syrup and ice. Shake for 15-20 seconds. Strain over fresh ice into a highball glass. Top with club soda water. Garnish with remaining mint sprig and lime wedge.
