½ oz Wild Card Absinthe

Two classics join forces for this tasty treat — the Sazerac and the old time soda fountain milk shake. To prepare, muddle CW and gelato in a pint glass or shaker tin. Then separately fill a Collins glass with ice and pour absinthe over. Add muddled CW and gelato and top with club soda. Garnish with chocolate if desired.
The delicious gelato used for this recipe is one of Oregon Spirit Distillers’ collaborations with Bontà Natural Artisan Gelato, made locally in Bend, Oregon. Be sure to check them out!
1½ oz Merrylegs Genever Style Gin
4 oz tomato juice
4 dashes Tabasco Pepper Sauce
4 dashes Worcestershire Sauce
½ oz pickle juice
¼ tsp ground black pepper
½ tsp horse radish
1 oz porter or stout beer
Salt, pepper & paprika for rim
Pickled veggies for garnish
For a unique take on a classic, this recipe combines our own house recipe bloody mix with our Merrylegs Genever Style Gin in place of the traditional vodka. To make your own, fill a shaker tin with ice and shake all ingredients except beer. Strain into an iced pint glass with a salt, pepper & paprika rim. Top with beer, use bar spoon to stir well and add pickled veggies on a skewer for garnish. (Garnish as pictured: Spanish olive, pickled carrot, green bean, bell pepper, garlic & onion.)
2 oz C.W. Irwin Bourbon
¾ oz Lemon Juice
1 oz Simple Syrup
1 Egg White
1 oz Distiller’s Choice Blackberry Cordial
CW Irwin Bourbon Cherries for Garnish
Add all liquid ingredients except the Blackberry Cordial to a clean shaker tin without ice. Shake vigorously for about one minute, then add ice and shake vigorously a second time to chill ingredients. Strain into a rocks or Collins glass. Then pour the Blackberry Cordial over the back of a bar spoon on top of the cocktail. This technique is referred to as a “float” and the cordial should stay evenly balanced at the top of the glass. Garnish with a skewer of fresh blueberries and a strawberry.

1 oz Coconut Milk or Half & Half
2 oz Iced Thai Tea or Chai Tea Concentrate
¾ oz Simple Syrup
Happy Father’s Day! Celebrate with a nice Trini-DAD Thai Tea! Begin by adding all ingredients to a clean mixing glass, add ice and stir gently. Strain over fresh ice into an old fashioned glass.

A great way to surprise Dad — plenty of spice but with some sweetness to cut the heat. I often recommend adding chai tea as a cocktail mixer ingredient, as it’s a great way to experiment with spice — and there are so many different varieties! Oregon Chai Tea is my go-to brand but Thai Tea is another that can add depth and sweetness. This is one cocktail where the flavor complexity comes from the ingredients more than the build. It’s very simple to make, and perfect for those hot summer afternoons.
1 oz Distiller’s Choice Scorpion Vodka
2 oz Carrot Juice
½ oz Lemon Juice
¾ oz Triple Sec or Simple Syrup
Lemon Twist for Garnish
Celery Stalk or Cucumber Slice for Garnish (Optional)
Begin with a collins glass and add all liquid ingredients. Stir with bar spoon, then add ice. Garnish with a lemon twist and celery stalk.
Talk about hot summer nights! This spicy cocktail features our newest Distiller’s Choice Release, a Scorpion Pepper Vodka. This naturally flavored vodka features a great level of heat, though not intended to be consumed straight. It is rather meant to be tamed down in cocktails so please keep that in mind when giving it a taste! The recipe includes a full shot of the intense spirit. If you want to reduce the amount of heat, sub-in part Oregon Spirit Vodka and reduce in equal part the Scorpion Vodka. A drink can always be adjusted to have more heat by adding a ‘float’ of Scorpion at the end of the cocktail build. Enjoy!

2 oz fresh grapefruit juice
2 dashes Angostura bitters
1 grapefruit twist for garnish
Add all ingredients to clean shaker tin, fill with ice and shake well until tin is very cold to touch. Strain into a chilled coupe glass and garnish with grapefruit twist, making sure to express the oils from grapefruit peel into the cocktail.
