2 oz C.W. Irwin Bourbon
1.5 oz Apple Cider
.5 oz Brown Sugar & Cinnamon Simple Syrup
.5 oz Lemon Juice

Add all ingredients to shaker tin filled with ice. Shake and strain into a coupe or martini glass. Garnish with Orange Zest or Cinnamon Stick.

2 oz Grapefruit Juice
2 Dashes of Grapefruit Bitters
Splash of Simple Syrup
4-6 Basil Leaves + 1 Basil Sprig for Garnish

Begin by giving basil a light muddle in shaker tin. Add ice and remaining ingredients. Shake and strain into a lowball glass filled with ice. Garnish with a sprig of fresh basil.

1 oz C.W. Irwin Bourbon
6 drops of Wild Card Absinthe
1 oz Simple Syrup
1 oz Lemon Juice
1 Egg White

Dry Shake all ingredients in shaker tin for twenty seconds, then add ice and continue shaking for another minute or so. Now strain into a coupe glass and garnish with a lemon twist.

2 oz Chai Tea Concentrate

Begin with a shaker tin full of ice, add Wild Card Absinthe and stir until the liquid is white in color. Now add C.W. Irwin Bourbon and Chai Tea. Stir and strain into chilled rocks glass with ice.

Central Oregoni Cocktail

2 oz C.W. Irwin Bourbon
1 oz Sweet Vermouth
2 oz San Pelligrino Blood Orange

Fill Lowball Glass with ice. Add C.W. Irwin Bourbon and Sweet Vermouth, stir. Top off glass with ice and fill with San Pelligrino Blood Orange.

1 oz C.W. Irwin Bourbon
¾ oz Lillet Blanc
¾ oz Cointreau
½ oz lemon juice

Fill a cocktail shaker with ice. Add C.W. Irwin, Countreau, Lillet Blanc and lemon. Shake until well chilled, about 15 seconds.
Strain into a chilled coupe and garnish with mint sprig.

2 oz C.W. Irwin Bourbon
1 oz Lime Juice
1 oz Simple Syrup
3 Fresh Sprigs of Thyme

Remove stems from 2 of the thyme sprigs and place leaves in bottom of shaker tin.  Muddle gently, then add ice, simple and lime and shake only this mixture until well chilled.  Now prepare cocktail glass, add ice and bourbon and top off with the shaken thyme limeade. Garnish with remaining sprig of thyme.

Whiskey Sour

 

1 1⁄2 oz CW Irwin Bourbon
3⁄4 oz Simple Syrup
Juice from 1⁄2 a lemon
3⁄4 oz Egg White

Fill cocktail shaker with ice, add all ingredients, and shake vigorously. Shake very hard to get the ingredients to emulsify and form a layer of foam on top of the cocktail. Strain into a chilled Old Fashioned glass.
